SPONGE CAKE from scratch - PROFESSIONAL BAKING

This is the basic sponge cake recipe. It is economical and simple.

Aggs 562 g (kalau telur A atau B = 10 biji)
Fine sugar  375 g
Cake flour 375 g
Butter/Oil  125 g
Vanilla extract 1 tsp

1. Preheat oven 190C
2. In a steel mixer bowl, mix eggs, sugar and salt. Hold the bowl above a pot of simmering water and whip using hand whisk. Ensure it doesn't go beyond 40C.  Once it almost reach the temperature, whip fast on high speed.
3. You should achieve the 'ribbon trail' effect. Add flavouring.
4. The flour must be sieved. Fold the flour into the egg mixture in 4 portions.
5. Finally, add the melted butter.

* For swiss rolls, you can omit the butter.
